A Recommended Flour Formulation

Mary Schluckebier, Home Economist, suggests using 1 cup of brown rice flour for 1 cup of wheat flour. Another recommendation of hers is to use 1 cup brown rice flour, 1/2 cup potato starch, 1/2 cup sweet rice flour and 1 tablespoon of unflavored gelatin. This is particular good for baking bread.

Differences Do Exist

There are some differences between baking bread with wheat flour and baking bread with non-wheat flour. You will need to add a dough enhancer to the non-wheat flour because there is no gluten. Commercial dough enhancers can be purchased, or you can use lemon juice or vinegar. Your non-wheat bread dough will only rise one time. If you punch it down, as you do with wheat flour breads, you will just have a lump of dough left in your bowl. It will not rise again. So, do not punch it down, just let it rise once and then bake.

Although it may take a bit to adjust to using gluten free recipes, you may find that you enjoy breads and other baked goods made with flour replacements even more than you used to enjoy baking with wheat.
